Ingredients:

2 tablespoons vegetable oil
1 onion, finely chopped
three cloves garlic, minced
1-inch piece of sparkling ginger, peeled and minced
2 teaspoons curry powder
1 teaspoon ground cumin
1 teaspoon floor turmeric
1 teaspoon ground coriander
half teaspoon paprika (optionally available, for brought warmth)
1 can (14 ounces) diced tomatoes
1 can (14 oz.) chickpeas, tired and rinsed
2 medium potatoes, peeled and diced
1 carrot, diced
1 bell pepper, diced
1 cup vegetable broth or water
Salt and pepper to taste
Fresh cilantro, chopped, for garnish (optional)
Cooked rice or naan bread, for serving

Instructions:

Heat the vegetable oil in a large pot or skillet over medium warmth. Add the chopped onion and sauté till it will become translucent, approximately three-four mins.

Add the minced garlic and ginger to the pot and sauté for a further minute till fragrant.

Stir inside the curry powder, ground cumin, ground turmeric, floor coriander, and paprika (if the usage of). Cook the spices for about 1 minute to toast them, stirring continuously to save you burning.

Add the diced tomatoes with their juices to the pot and stir properly to combine with the spices and aromatics.

Add the diced potatoes, carrot, bell pepper, and tired chickpeas to the pot. Pour in the vegetable broth or water. Stir the entirety together.

Bring the aggregate to a simmer, then lessen the heat to low. Cover the pot and permit it simmer for about 15-20 mins or till the potatoes and vegetables are smooth, stirring every so often.

Once the vegetables are cooked through, season the curry with salt and pepper to flavor. Adjust the seasoning as wished.

Serve the vegetarian curry warm over cooked rice or with naan bread. Garnish with chopped clean cilantro if favored.
